Roast cherry & thyme chicken with Cherry Vinegar



  • Whole chicken separated in to wings, legs, thighs and breasts

  • Thyme sprigs

  • Cherries, pitted

  • Garlic, minced

  • Rapeseed oil

  • Cherry vinegar



  1. Preheat the oven to 180C

  2. Place the pieces of chicken in a heavy pan, tucking the thyme sprigs in amongst the chicken pieces

  3. Mix the garlic, cherry vinegar and rapeseed oil in a separate bowl, add the cherries and season

  4. Pour over the chicken

  5. Roast for 40 minutes or until cooked through
