Roasted chicken with spiced rice & Piri Piri Dressing & Marinade


  • Chicken, spatchcocked

  • Onion, chopped

  • Red pepper, sliced

  • Basmati rice

  • Piri Piri Marinade & Dressing. Piri Piri Marinade & Dressing has been discontinued, why not try Chilli Oil.


  1. Rub the Piri Piri Marinade& Dressing over the chicken, leave to marinate for an hour or overnight if possible.

  2. Fire up the bbq or pre heat the oven to 200C.

  3. When the flames have died down, put the chicken in the centre of the bbq and cook for approx 15 to 20 mins.

  4. Turn over and cook for a further 10 mins or more, until the juices run clear and the chicken is cooked through.

  5. Alternatively roast in the oven for approx 40 minutes and grill for a further 10 mins to char the skin.

  6. Meanwhile heat the Piri Piri Dressing & Marinade in a large pan, sauté the onions and pepper until soft.

  7. Add the rice and stir well.

  8. Add boiling water, stir and cover.

  9. Reduce heat and allow the rice cook for about 20 minutes until soft.
